Handgebäck

Pastries & rolls

Small bakes that show the craft clearly — preferment, rest, and shaping by hand before the morning rush.

Kaiser rolls on parchment

Lärche Semmel

Our everyday roll. Preferment, long rest, crisp crown. The one people say tastes like childhood mornings.

Butter croissants on a cooling rack

Butter croissant

Laminated dough with quiet layers and a deep golden bake. Best while still faintly warm.

Cinnamon swirls and sweet buns

Morning swirls

Cinnamon and soft sweet dough — weekend comfort for coffee at the timber counter.

Apple strudel and apricot pastry

Strudel & fruit

Thin pastry, seasonal fruit, light sugar. Austrian bakery classics without heavy fuss.

Hands shaping pastry dough

Hand rolls

Seeded, salted, and soft milk rolls shaped one by one. Stock changes with the day’s dough.

Flour for pastry dough

Party trays

Need a tray of rolls or pastries for a gathering? Call ahead — we bake to order when we can plan the oven.

Why handwork

A roll tells the truth quickly

There are machines for nearly everything now. We still fold, divide, and shape by hand because texture and crust remember the pressure of fingers — not a conveyor.

Come early for the widest tray; by midday the Semmeln may be gone, and that is how we like it.
